  • 1 l chicken broth
  • 250 g rice noodles
  • 200 g turkey breast
  • 20 g ginger
  • 1 pc whole star anise
  • 1 pc whole cloves
  • 2 g cinnamon stick
  • 20 g fish sauce
  • 10 g fresh coriander
  • 20 g fresh mint
  • 20 g basil
  • 10 g lime

    Slice the ginger into thin rounds.

    Bring the broth to a boil with the ginger, star anise, cloves, and cinnamon, then simmer for about 30 minutes.

    Strain out the spices.

    Add the fish sauce and keep the soup warm.

    Cook the rice noodles separately according to package instructions, then rinse briefly and drain.

    Place the raw turkey slices into bowls and pour hot broth over them, allowing them to cook gently.

    Add the noodles, then sprinkle with bean sprouts, basil, mint, and coriander.

    Serve immediately with lime wedges on the side.
