Ingredients
- 2 pcs medium potatoes, peeled and sliced
- 300 g extra virgin olive oil
- 2 pcs fresh tomatoes, sliced
- 3 pcs cloves garlic, minced
- 1 pc large eggplant, sliced
- 1 handful fresh parsley
- 2 pcs medium zucchini, sliced
- 1 handful (preferably fresh) oregano
- 3 pcs red onions, sliced
- 1 handful fresh thyme
- 3 pcs red bell peppers, sliced
- 30 ml (preferably white) balsamic vinegar
- 3 g salt to taste
- 3 g pepper to taste
Steps
- 1Preparation: Preheat the oven to 190 °C. Slice all vegetables thinly.
- 2Prepare the marinade: In a small bowl, mix the olive oil, minced garlic, and chopped fresh herbs.
- 3Time to season! Place the tomato slices in a bowl, salt them, and toss with the marinade. Repeat the process with the potatoes, eggplant, and peppers. Drizzle the onion with balsamic vinegar instead of salt, then toss it in the marinade.
- 4Layering: Arrange the vegetables in layers or rows in a baking dish. Pour the remaining marinade over them. Drizzle the top with 2 tablespoons of tomato sauce/passata, and pour about ⅓ cup of water into the corner of the dish (not directly onto the vegetables).
- 5Baking: Bake for 45–60 minutes, until golden and tender. Let it rest for 15 minutes before serving, then serve with Feta cheese.
