Ingredients

  • 30 ml extra virgin olive oil
  • 400 g cleaned and finely chopped kale
  • 15 ml apple cider vinegar
  • 1 pc pear
  • 15 g balsamic vinegar
  • 35 g pumpkin seeds
  • 5 ml maple syrup
  • 30 g desiccated coconut
  • 5 g Dijon mustard
  • 10 g black sesame seeds
  • 7 g garlic
  • 75 g pomegranate seeds
  • 1 g salt
  • 20 g sunflower seeds
  • 1 g pepper
  • 1 g ground cinnamon

    In a medium bowl, combine the dressing ingredients, then adjust the flavors to taste.

    Remove the stems from the kale and chop the leaves into very fine, "shredded" pieces – the smaller they are, the softer they will be. Wash the leaves, then dry them. 💡 Tip: Massaging the kale with the dressing helps to soften the leaves.

    Place the kale in a large bowl and toss thoroughly with the dressing, ensuring every leaf is well coated.

    Add toppings to the salad as desired, then sprinkle with a little cinnamon. Serve immediately, or let it sit in the dressing for about half an hour for the flavors to meld. 🥗 Enjoy your meal!
