Scientific studies show that grass is a more natural diet for beef cattle than cereals. Grass-fed beef has a more even distribution of fat – it is better marbled – which makes it more enjoyable to eat. Usage

Shanks are a distinctive cut of beef for authentic “collagenous” casseroles. The meat is usually cut into 3-4 cm cubes and braised in a tomato-based sauce, flavoured with wine and/or beef stock with herbs, spices or vegetables. Cooked slowly and at a low temperature, the result is meltingly tender meat in a rich sauce.
