Frozen, fattened duck liver, class II
Frozen, cleaned, vacuum-packed raw, fattened duck liver.
Use
After thawing and opening, season to taste and fry.
Grilled duck liver slices with zucchini
Ingredients for 4 people:
- 60 dkg fattened duck liver
- 12 pcs new carrots
- 4 pcs medium potatoes
- 2 pcs larger zucchinis
- 1 bunch of parsley
- ½ liter cooking cream
- salt, pepper
Preparation
Clean the vegetables. Leave about 1 cm of the green part on the carrots. Cut the zucchinis into thicker slices. Cut the duck liver into about 1.5 cm slices. Cut the cleaned potatoes into thicker slices and put them in a cooking pot. Salt, pepper and cook in cream until soft. Steam the carrots until done.
Fry the zucchini in a pan with extra virgin olive oil, steam it so that it remains crispy. This will take a few minutes. Then add the carrots to the zucchini, salt, pepper and sprinkle with chopped parsley.
Fry both sides of the duck livers in a preheated pan until golden brown. Salt, pepper, then put the duck liver slices in a 200 °C oven for 2-3 minutes. Place the duck liver slices on a plate, and the creamy potatoes and steamed vegetables next to them.
Storage
Store frozen at -18°C or below.
