2. MAKE THE ROAST POTATOES

Now make the roast potatoes. Preheat the oven to 180 degrees, then peel the potatoes. Soak the peeled potatoes in water for two days. Wash the skin thoroughly and soak it, then drain and dry it. Heat 2 dl of oil in a large pan, in which you fry the potatoes and the skin until golden brown. Drain on paper towels, then sprinkle with thyme and rosemary on a baking sheet and put in the oven for 5-8 minutes, then season with salt.

3. MAKE THE RATATOUILLE

To make the ratatouille, dice the vegetables. Fry them together in a little oil for 5 minutes, but add the tomatoes only in the last minute, then season the whole thing with salt, pepper, thyme and rosemary.
