In the Mekong Delta in southern Vietnam, things are really green! This is where the tangy and refreshing limes with exceptional juice and edible peel grow and ripen. The fruit loves the warm, humid and sunny climate, where temperatures are around 30 degrees Celsius. "The lime is a funny fruit. The longer they ripen in the sun, the greener they become!" - laughs master grower Manh. "That's why we regularly thin out and prune the trees so that the fruit gets as much sunlight as possible."
The trees are irrigated with fresh water from the Mekong River, which flows through the plantation via canals. Natural cultivation is important to San Lucar. In the case of pests, they rely on natural predators or biological agents.
"So after about three months, when the limes have turned completely green from the sun, we carefully pick them by hand. We only select the most beautiful fruits" - explains Manh proudly. After harvesting, the limes are only washed. That's it. They are not waxed or preserved.
