HúsSzabóság Brazilian tenderloin

Tenderloin, also known as the fillet, is an elongated, tapered, cylindrical cut of meat. Ingredients for 2 people

  • 4 cloves of garlic
  • a 4 cm long piece of ginger
  • 350 grams of asparagus
  • 2 pieces of 125 gram HúsSzabóság Brazilian filet mignon
  • 2 tablespoons of black bean sauce

Preparation

  1. Peel the garlic and the ginger, then slice very finely. Place in a large cold, non-stick skillet with 1 tablespoon of olive oil, and place over medium heat. Fry, stirring frequently.

  2. When it is crispy and slightly golden brown, remove from the pan and set aside.  Set aside the remaining garlic oil as well.

  3. Line up the asparagus and cut off the woody ends. Then place the asparagus spears in the hot skillet. Tip: if you hold the asparagus by its two ends and bend it, it will break exactly where the woody part ends.

  4. Season the steaks with sea salt and black pepper. Add the asparagus and turn the heat up to high. Cook for 3 minutes, turning regularly!

  5. Add the black bean sauce and 1 tablespoon of red wine vinegar. Cook for another 1 minute, for medium rare steaks. Cook longer to taste.

  6. Slice the steaks, serve, then sprinkle with the crispy garlic and the ginger.
