  • 70 g butter

  • 1.2 liters of chicken stock
  • 200 ml cream, min. 31%
  • A pinch of ground nutmeg
  • A pinch of white pepper
  • Salt

Preparation:

  1. Cut 100 g of garlic into coarser pieces. Melt 60 g of butter in a pan, add the garlic and fry it over frequent stirring. Add the flour, reduce the heat and cook for 2 minutes while stirring continuously.
  2. Add the chicken stock, bring to a boil and season with salt, pepper and nutmeg. Then let the soup simmer for half an hour without a lid. Stir occasionally.
  3. Add the cream and cook for 1 minute. Carefully mix the soup with a hand blender. Pour the soup into a clean container through a sieve and mix again with the hand blender.
  4. Peel 2 cloves of garlic and cut into thin slices. Heat the remaining butter in a pan and fry the garlic over medium heat, stirring frequently, until golden brown.
  5. Serve the soup with the fried garlic.

Fry the garlic carefully, because the darker colored fried garlic has a bitter taste. Do not use older garlic that has started to sprout, germinate - you cannot make a tasty soup from such garlic. You will need a hand blender and a filter or sieve to prepare it.
