Alnatura baking powder - 4-pack

Application - Salami pizza with cauliflower base

Preparation time
25 minutes + 30 minutes baking time

Ingredients
For 2 pizzas with a diameter of 22 centimeters (for 4 people):

  • 1 cauliflower (approx. 800 g)
  • 300 g Alnatura chickpea flour
  • 2 teaspoons Alnatura cream of tartar baking powder
  • 2 teaspoons Alnatura sea salt with iodine
  • 200 ml hot water
  • 8 tablespoons Alnatura Italian extra virgin olive oil
  • 500 g Alnatura mozzarella minis
  • 60 g rocket
  • 120 g Alnatura Pesto Verde (1 cup)
  • 80 g salami

Preparation

  1. Wash and clean the cauliflower, break into florets and chop finely (to the size of rice grains).
  2. In a bowl, mix the chickpea flour with baking powder, salt, hot water and oil. Stir in the finely chopped cauliflower, cover and let the dough swell at room temperature for 10 minutes.
  3. Preheat the oven to 200°C, set to convection mode. Halve the mozzarella balls, wash the rocket and dry.  Place the dough on 2 baking trays lined with baking paper and spread out to a thickness of ½ cm in the shape of 2 pizzas with a diameter of approx. 22 cm.
  4. Bake the pizzas in the oven for approx. 22 minutes without toppings. Then spread with pesto, place the salami and mozzarella on top and finish baking for approx. 8 minutes. Serve sprinkled with rocket.

Tip
Instead of pesto verde, other types of pesto can be used, according to taste. To make a meatless version, use vegan Alnatura "Salami" made from seitan as a topping.
