Gyermelyi 4-egg Tarhonya

After toasting, cook the tarhonya, thanks to its large surface it absorbs a lot of sauce, making it a perfect choice for stews. It is also excellent for making one-pot dishes.

Ingredients
200 g Gyermelyi 4-egg tarhonya, 150 g goose gizzard, 150 g goose heart, 150 g roast goose liver, 4 pcs goose legs (smaller), 1+1 onion, 2+4 cloves garlic, 1 pc carrot, 100 g peas, 1 pc paprika, 2 tablespoons goose fat, 300 g goose fat (for frying).
Preparation
- Clean the legs, vegetables and wash them.
- Put the goose legs in a heat-resistant bowl, add the 4 cloves of garlic and one onion cut into wedges. Pour the melted fat over it. It is good if it covers it.
- Cover and place in a preheated oven at 120 degrees. Leave it in until it becomes soft.
- Clean the gizzard, heart and cut them into pieces.
- Fry the onion in a little goose fat, then add the gizzard and stir. Add a little water and steam it covered.
- When it is half soft, add the heart and the crushed garlic. Steam further, if necessary, add water.
- Meanwhile, fry the tarhonya in a little goose fat. When the gizzard is almost soft, add the fried tarhonya, the chopped carrot, and the chopped paprika, then salt. Pour in 4-5 dl of hot water. Cover and cook very gently, and when the water has been absorbed, set aside covered.
- Salt and pepper the goose legs and roast them in the oven at 200°C until golden brown.
- Chop the roast liver and fry it in a little oil, then add the peas, stir and pour it over the tarhonya.
- Cover and let it rest for another 10 minutes.

In addition, it carries out agricultural activities on an area of 8,800 hectares, operating a closed vertical integration. It all started on January 21, 1953, when twelve farmers from Gyermely, unable to bear the increasingly impossible burdens of individual farming, founded the Petőfi Cooperative. In 1970, the government decided to build a pasta factory, for which they were looking for a location. Gyermely's reputable cooperative undertook the task and was given the opportunity. This is how Gyermelyi Zrt. was founded.
