Rice Noodle Pho – Traditional Vietnamese Soup Recipe

Ingredients

• 500 g beef stock
• 200 g rice noodles
• 200 g thinly sliced beef (such as fillet)
• 1 onion, thinly sliced
• 2 cloves garlic, finely chopped
• 1 piece ginger (about 2 cm), finely chopped
• 2 star anise
• 2 cinnamon sticks
• 2 cloves
• 2 tbsp fish sauce
• 2 tbsp soy sauce
• Fresh herbs (coriander, mint, basil) for garnish
• Lime wedges for serving
• Sambal or chilli sauce for seasoning

Instructions

1. Bring the beef stock to a boil in a large pot. Add the onion, garlic, ginger, star anise, cinnamon and cloves. Simmer for about 30 minutes to allow the flavours to infuse.
2. Meanwhile, cook the rice noodles according to the instructions on the package. Rinse with cold water and set aside.
3. Remove the star anise, cinnamon and cloves from the stock. Add the fish sauce and soy sauce and stir well.
4. Add the thinly sliced beef fillet to the stock and cook for 1-2 minutes, or until the meat is cooked to your liking.
5. Divide the rice noodles between bowls. Ladle over the soup and beef. Serve with lime wedges and fresh herbs, and season with sambal or chilli sauce.
