Ingredients for the Dough

  • 50 g butter (melted)
  • 1 teaspoon lemon juice
  • 150 ml milk
  • 120 g whole spelt flour
  • 100 g cane sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 pinch salt

Instructions

    Preheat the oven to 180 °C and prepare a non-stick doughnut pan.

    In a medium bowl, mix the melted butter with 1 teaspoon of lemon juice and 150 ml of milk. Add the flour, 50 g of cane sugar, baking powder, baking soda, 1 teaspoon of cinnamon, and a pinch of salt, then work into a smooth dough. Pour the prepared dough into the doughnut pan.

    Bake the doughnuts for 10–12 minutes at 180 °C until golden brown. Meanwhile, in a deep plate, mix the remaining 50 g of cane sugar with the remaining 1 teaspoon of cinnamon.

    While still warm, roll the baked doughnuts in the cinnamon sugar, then let them cool for about 30 minutes before serving.
Tip
If you don't have a doughnut pan, you can use a muffin tin and place a small piece of crumpled baking paper in the center of each cup to achieve the characteristic hole shape.
