INGREDIENTS FOR THE SALAD
- 170 g
- 1 can chickpeas
- 1/2 cucumber
- 50g feta cheese
- 3 slices bacon
- 1 red onion
- 1 handful fresh mint
- 1 handful fresh dill
- A little oil for frying bacon
INGREDIENTS FOR THE DRESSING
- 30 g olive oil
- 2 tablespoons lemon juice
- 1 clove garlic
- 1 tablespoon honey
- Pinch of salt
- Pinch of pepper
PREPARATION
- 1Pour the orzo pasta into a small pot, cover with approximately 500 ml of water, and cook for 10 minutes, or until tender (or follow the instructions on the package).
- 2Meanwhile, fry the bacon in a pan with a drop of oil until crispy on both sides. Transfer to a plate lined with paper towels to absorb excess fat.
- 3Drain the cooked orzo pasta and transfer it to a salad bowl. Add the drained chickpeas, diced cucumber, chopped herbs, thinly sliced red onion, crumbled feta, and crispy bacon broken into smaller pieces.
- 4Prepare the dressing by mixing the olive oil with lemon juice, pressed garlic, honey, salt, and pepper. Pour it over the salad and mix thoroughly to combine the flavors.
