Ingredients
- 200 g vine tomatoes
- 50 g canned chopped tomatoes
- 50 g red onion
- 2 cloves garlic
- 50 ml olive oil
- 1 bunch fresh basil
- 20 g Parmesan cheese
- 1 g chili pepper
- 1 slice ciabatta
- 1 pinch salt
- 1 pinch ground black pepper
- 50 g mascarpone
- 10 g granulated sugar
- 70 g cherry tomatoes
Preparation
- 1Halve the tomatoes, sprinkle with a little sugar, and place them on a baking tray. Season with salt and pepper, drizzle with olive oil, then roast with the red onion, garlic, and chili at 160°C until golden brown, for about an hour. If the liquid evaporates too much, replenish with a little water or broth.
- 2Place the roasted, golden-brown vegetable mixture into a blender and blend until silky smooth.
- 3Drizzle the cherry tomatoes with olive oil and quickly fry them in a hot pan until golden brown.
- 4Ladle the blended soup into bowls, add the roasted cherry tomatoes, fresh basil, a spoonful of mascarpone, sprinkle with Parmesan, and serve with ciabatta slices toasted in butter.
Tip
For an even more intense flavour, use ripe, juicy vine tomatoes. Rub the ciabatta with a clove of garlic after toasting!
