INGREDIENTS

  • 500 g of Frozen cherries
  • 120 g of Cane sugar
  • 80 g of Ladyfingers
  • 70 g of Dark chocolate
  • 130 g of Unsalted butter
  • 50 g of Sliced almonds
  • 2 tablespoons of Brandy
  • 1 pinch of Ground cinnamon
  • 1 tablespoon of Powdered sugar
  • 120 g of Granulated sugar
  • 120 g of Fine flour

PREPARATION AND BAKING

    Let the cherries thaw. Preheat the oven to 220°C. Chop the chocolate finely.

    In a saucepan, melt 70 g of butter over medium heat, add the cherries, cinnamon, and cane sugar. Cook for 4 minutes, stirring frequently.

    Then reduce the heat to one-third, and stir in the chopped chocolate and sliced almonds. Once the chocolate has melted, add the crushed ladyfingers and brandy. Mix thoroughly, then remove from heat. Fill heat-resistant baking dishes two-thirds full with the mixture.

    In a bowl, mix the remaining 60 g of butter with the granulated sugar and fine flour. Work thoroughly by hand until a crumbly texture is achieved. Sprinkle the crumbs over the cherry mixture in the baking dishes, right up to the rim. Place the dishes on a baking tray and bake in the preheated oven for 5 minutes.

    Before serving, sprinkle the finished dessert with powdered sugar. It's excellent both warm and cold!
Tip
In season, you can use fresh, pitted cherries, or even firmer pears, apples, or rhubarb. It can also be made with canned cherries, in which case add less sugar to the mixture.
A scoop of vanilla ice cream or a spoonful of thick sour cream pairs wonderfully with the hot crumble.
Baking dishes with a diameter of 8 cm and a height of 5 cm are ideal for preparation.
