Cut the sweet potato into 0.5 cm x 0.5 cm sticks. Soak in cold water for half an hour, then thoroughly pat dry.
Mix the spices with the cornstarch (if using).
Mix the sticks with the oil and sprinkle with the spice mixture. Bake in small batches, ensuring the sticks do not touch each other, until cooked through in about 20 minutes (baking time and temperature may vary by appliance, approximately 20 minutes between 160-180 degrees Celsius).
