Our coffee is the joint product of small-scale farmers in the Huila region of Colombia, where the decaffeination process was also carried out locally, using the ethyl acetate (E.A.) method extracted from sugar cane. This benefits both the local economy and the coffee, as sugar cane is readily available in Colombia, so the coffee does not need to be transported to distant countries for decaffeination, thus sparing it the negative effects of transport and storage. In the first phase of the treatment, the coffee is steamed, which loosens the structure of the beans, facilitating extraction. In the next phase, the beans are soaked in an ethyl acetate solution, which dissolves the caffeine molecules from the beans. Finally, the coffee is rinsed and steamed again, then dried until it reaches its original moisture content.
