Kotányi Agartine vegetable gelling agent
The contents of the bag are sufficient for 500 ml of liquid and correspond to approx. 6 sheets of gelatine. Agartine is the perfect vegetable substitute for gelatine, which is extracted from algae. Agartine has a neutral taste, a characteristic smell appears during cooking, which quickly disappears and becomes neutral in smell.
Suggested use
10 g Agartine corresponds to 6 sheets of gelatine.
- Cold preparation: Boil 10 g Agartine with 200 ml water / liquid for at least 2 minutes, stir in the remaining 300 ml cold liquid and pour into the desired moulds.
- Hot preparation: Mix 10 g Agartine with 500 ml water / liquid before boiling, boil together for at least 2 minutes, then pour into the moulds.
If you prepare it with cream, the mixture must be cooled so that the cream does not collapse.
