Serving Suggestion
Heat a non-stick skillet over medium-high heat and add Beyond Vegan Ground Beef. Cook for 5-8 minutes, breaking into desired size and stirring frequently. If adding sauce, simmer for 30 minutes.
Beyond Vegan Ground Beef Shepherd's Pie

Ingredients
Serves 4
- 1 pound Beyond Vegan Ground Beef
- 4 medium potatoes
- 3 tbsp vegan butter
- 2 tsp salt
- 2 tbsp olive oil
- ½ onion
- 3 carrots
- 3 cloves garlic
- 2 tbsp flour
- 1 tsp dried parsley
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1.5 tsp paprika
- 2 tbsp tomato paste
- 2 tsp Worcestershire sauce
- 1.5 cups vegetable broth
- ½ cup frozen peas
- ½ cup frozen corn
Instructions
- Peel and dice the potatoes. Place in a large pot, cover with water, and bring to a boil. Add 1 teaspoon of salt and continue to boil for 15-20 minutes, or until the potatoes are fork-tender. Drain and mash with vegan butter and remaining ½ teaspoon of salt.
- While the potatoes are cooking, dice the onion and carrots and mince the garlic.
- Place a large skillet over medium heat. Add olive oil and add the onion to the pan, sauté for 5 minutes. Add the carrots and garlic. Cook for an additional 2-3 minutes, stirring occasionally.
- Add the Beyond Vegan Ground Beef to the skillet and crumble. Cook for 4-5 minutes. Add the flour, parsley, thyme, rosemary, and paprika and stir to coat the vegan ground beef. Cook for an additional minute.
- Add the tomato paste, Worcestershire sauce, and vegetable broth. Bring to a boil and let simmer for 3-4 minutes. Add the corn and peas and season with salt and pepper to taste.
- Pour the filling into a baking dish and top with the mashed potatoes. Bake at 400 degrees for 25-30 minutes. Let cool for 15 minutes before serving.
