  • 1 pound Beyond Vegan Ground Beef
  • 4 medium potatoes
  • 3 tbsp vegan butter
  • 2 tsp salt
  • 2 tbsp olive oil
  • ½ onion
  • 3 carrots
  • 3 cloves garlic
  • 2 tbsp flour
  • 1 tsp dried parsley
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1.5 tsp paprika
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1.5 cups vegetable broth
  • ½ cup frozen peas
  • ½ cup frozen corn

Instructions

  1. Peel and dice the potatoes. Place in a large pot, cover with water, and bring to a boil. Add 1 teaspoon of salt and continue to boil for 15-20 minutes, or until the potatoes are fork-tender. Drain and mash with vegan butter and remaining ½ teaspoon of salt.
  2. While the potatoes are cooking, dice the onion and carrots and mince the garlic.
  3. Place a large skillet over medium heat. Add olive oil and add the onion to the pan, sauté for 5 minutes. Add the carrots and garlic. Cook for an additional 2-3 minutes, stirring occasionally.
