Alnatura Organic Roasted, Salted Pistachios
For this snack, aromatic pistachios are roasted in their shells and seasoned with sea salt. Alnatura pistachios are a classic, organically grown snack.
Shelled, roasted and salted pistachios are a great tasting ingredient for salads and pesto, as well as in fine baked goods and desserts.
Usage - Almond-Lemon Cake with Pistachios
Preparation time
30 minutes + 55 minutes baking time + 2 hours cooling time
Ingredients
for a 24 cm diameter cake tin (12 slices)
- 150 g Alnatura Organic Wheat Flour (type 405)
- 150 g Alnatura Organic Ground Almonds
- 200 g Alnatura Organic Raw Cane Sugar
- 6 eggs
- 130 g unsalted butter
- 1 pinch of Alnatura sea salt
- 3 lemons
- 200 ml Alnatura Organic whipping cream
- 70 g Alnatura Organic Roasted, Salted Pistachios
Preparation
- Prepare the cake base. Knead the flour, almonds, 40 g sugar, 1 egg, 120 g cold butter and the sea salt into a smooth dough. Then refrigerate for 30 minutes.
- Prepare the filling. Grate the zest of the lemons, set aside the grated lemon zest, then squeeze out the lemons. Slowly heat the lemon juice, cream and 160 g sugar in a saucepan over medium heat (do not boil!) until the sugar has completely dissolved. Leave to cool while baking the cake base.
- Bake the cake base. Preheat the fan oven to 160°C. Grease the cake tin with the remaining butter. Roll out the dough on a floured work surface to a thickness of approx. 4 mm, place in the cake tin, smooth out by hand and form a 3 cm high rim. Bake for 15 minutes.
- Reduce the oven temperature to 120°C. Pass the lemon mixture through a sieve into the dish and add the lemon zest. Add the remaining 5 eggs one at a time and mix with a whisk or hand mixer. Spread the lemon mixture over the cake base and bake the cake for a further 40 minutes.
- In the meantime, remove the shell from the pistachios, chop coarsely and sprinkle over the cooled cake.
