Alnatura BIO Carrot Juice

This organic carrot juice is made from carrots grown in Germany, freshly pressed and refined with lemon juice. The ingredients of Alnatura fruit juice come from Demeter farming. 

Suggested use

Carrot dumplings with fried onions

Preparation time

20 minutes + 35 minutes 

Ingredients

• 2 eggs
• 300 g wheat flour (BL-51)
• 0.50 teaspoon salt (2.50 g)
• 3 onions
• 3 teaspoons butter (12 g)
• 150 g grated Emmental cheese
• 220 ml carrot juice

Preparation

1. Dumpling and onion preparation - Break the eggs. Add the carrot juice, flour and half a teaspoon of salt. Mix with a hand mixer until you get a smooth mass. Leave to swell at room temperature for 10 minutes. Peel and slice the onions. Grease a baking tray of approx. 15 cm x 25 cm with 1 tablespoon of butter. 
2. Dumpling cooking - Preheat the oven to 200°C, top and bottom heat. Bring plenty of salted water to the boil in a large saucepan. Use the dumpling cutter to cut the rested mass into the boiling water. As soon as the dough floats to the surface of the water, drain it.
3. Onion frying, carrot frying, serving - Melt 2 tablespoons of butter in a frying pan and fry the onion rings over a medium heat for 20 minutes, turning frequently, until they are crispy brown. Place half of the finished dumplings on the bottom of the greased baking tray, sprinkle with half of the grated cheese, then place another layer of dumplings on top and sprinkle with the remaining cheese. Bake in the oven for 15 minutes, on the highest shelf. Sprinkle the finished dumplings with the onions and serve.
