Eat Me Blueberries, packed

Blueberry pancakes

Preparation time: 20 minutes

Ingredients:

• 3 eggs
• 200 ml vegetable milk
• 250 g buckwheat flour
• 2 teaspoons baking powder
• 1 lime
• half a teaspoon of vanilla sugar
• half a teaspoon of cinnamon
• 125 g blueberries
• coconut oil for frying
• a pinch of salt

Preparation:

1. Separate the egg yolks and whites, set the latter aside in a bowl. Mix the yolks with the vegetable milk using a whisk.
2. Add the flour and baking powder, mix until smooth.
3. Stir in the sugar, cinnamon, salt and grated lime zest.
4. Beat the reserved egg whites with a mixer until stiff. Then gently fold the finished foam and blueberries into the mixture.
5. Heat some coconut oil in a pan, then place a portion of the mixed batter in it and fry on both sides until golden brown.
