GabiJó Elderflower Strawberry Jam with Rowanberry (reduced sugar content)
This jam stands out from the rest in terms of its nutritional value. It contains no added sugar, and in fact, the total natural sugar content of this jam from the fruit is less than 5g per 100g, so it can be called low in sugar, and it also has a low calorie content, as it contains less than 40 calories per 100g. To achieve the right sweetness, we used two types of sweeteners, erythritol and stevia extract.
Erythritol is a so-called sugar alcohol, a substance that is found naturally in some fruits, such as pears and grapes. The sweetening components extracted from the stevia plant (officially known as steviol glycosides) are also calorie-free and contain no usable carbohydrates, which we considered particularly important, as we made this jam primarily for those who avoid consuming added sugars and need to limit their carbohydrate intake.
Suggested use
With its exciting, slightly tart flavour, it is an excellent choice to complement sweeter dishes, such as bird's milk, vanilla pudding, creamy cakes, adding a little extra flavour to our dessert.
Recipe suggestion - Jam eyes, slightly turbocharged
You've probably eaten jam eyes before. But have you ever eaten jam eyes turbocharged with GabiJó pecan-raisin jam? It's DIVINE and very easy to make.
Ingredients
- 200 g room temperature butter
- 140 g erythritol-based table sweetener
- 2 eggs (M)
- 270 g flour
- 1 tsp baking powder
- 1 pinch of salt
- 75g pecans
- 75g unsweetened dried fruit
- + 3-4 tbsp GabiJó jam in a flavour of your choice
Preparation
- Cream the butter with the sweetener using a food processor.
- Add the eggs one at a time and mix well.
- Add the flour, baking powder, salt and mix until smooth. Then fold in the pecans and dried fruit into the mixture.
- Cover the finished mixture and let it rest in the refrigerator for ½ hour.
- After ½ hour, form small balls from the mixture. Place the balls on a baking sheet lined with silicone baking paper, far enough apart. As if you were always leaving one's place out. Press a hollow in the middle of each ball with the end of a wooden spoon.
- Bake the biscuits at 180°C for 10-15 minutes until done.
- Spoon 1-1 tsp of GabiJó jam into the centre of the lukewarm biscuits and our jam eyes are ready.
