Serving suggestion - Paprika-coated fried fish with fermented gherkins and fresh bread

• Ingredients for 4 people: 1 jar of Rege Fermented Gherkins, 4 medium-sized trout (or other small freshwater fish) cleaned, 100 g fine flour, 25 g ground sweet paprika, salt, freshly ground pepper, 300 ml sunflower oil (for frying), fresh white bread, 6-8 slices of lemon.

Preparation

1. Rinse the fish under cold running water and pat dry with paper towels.
2. Score on both sides. Salt and pepper them inside and out.
3. Mix the flour thoroughly with the ground paprika. In a large flat plate, coat the fish in the paprika flour, thoroughly, so that the flour sticks evenly everywhere.
4. Heat the oil in a pan and fry the fish until crispy on both sides.
5. Serve with fermented gherkins, fresh white bread and lemon wedges.
