Serving suggestion - Garlic-roasted pork belly with spinach mashed potatoes and pickled beetroot

• Preparation time: 60 minutes
• Ingredients for 4 people: 1 jar of Rege Pickled Beetroot Slices, 700 g pork belly, 3 cloves of garlic, salt, freshly ground pepper, 600 g potatoes, 80 g fresh spinach leaves, 60 g butter, 100 ml full-fat milk, salt, freshly grated nutmeg.

Preparation

1. Preheat the oven to 190 degrees. Cut the pork belly into pieces as desired. Season with salt, pepper and massage in the crushed garlic.
2. Place the pieces of meat in a large ovenproof dish and pour a dl of water underneath. Cover with aluminium foil and place in the preheated oven. After 30 minutes, remove the aluminium foil and roast for another 25-30 minutes, until golden brown.
3. While the meat is roasting, prepare the side dish. Boil the cleaned, diced potatoes in boiling salted water until soft. Drain when cooked.
4. Chop the spinach and steam in butter. Add the drained potatoes and mash with a potato masher. Cream with warm milk. Season with salt and freshly grated nutmeg.
5. Serve the tender roasted pork belly with the special mashed potatoes and pickled beetroot.
