Recipe
Tzatziki.
Ingredients (4 servings)
- 2 medium cucumbers,
- 12 tbsp Greek yoghurt,
- 1 teaspoon salt,
- 1 pinch white pepper,
- 1 lime juice from lime,
- 5 cloves garlic,
- 1 pinch dill (freshly cut)
Preparation
Grate the cucumbers into a bowl on a medium grater. Then make the dressing: whisk the yoghurt in a bowl, then grate the garlic on a fine grater and stir in. Season with ground pepper and salt, then sprinkle in the dill and bring out the full flavor with the lemon juice. Pour the dressing over the cucumber and mix with a spoon. Refrigerate before serving, excellent with meats, as a sauce.
Yoghurt eggplant salad
Ingredients (2 servings)
- 2 eggplants,
- 4 dl Greek yoghurt,
- 3 cloves garlic,
- 2 tbsp coriander (ground, to taste),
- salt to taste,
- pepper to taste,
- 1 tbsp olive oil
Preparation
Preheat the oven to 180°C. Dice the eggplants. Place the eggplant cubes on a baking paper thinly coated with olive oil in a baking tray, salt lightly, and drizzle a few more drops of olive oil on them, then mix so that the oil reaches everywhere. Bake in the oven for 15 minutes. Meanwhile, mix the Greek yoghurt with the spices - coriander, crushed garlic, a little salt and pepper. Mix the roasted eggplant with the yoghurt after baking. Refrigerate before serving.
Storage
Refrigerated, at a temperature between +1°C and +6°C. Consume within 1-2 days after opening!
