  3. Roll out the dough on a floured work surface to a thickness of about 2 cm, cut the top with a knife.
  4. Cut out with a smaller scone cutter, place on a baking sheet, then cover and let rest for 15 minutes.
  5. Brush the scones with beaten egg, sprinkle with grated cheese, and bake in the middle of the oven.
