• Pinch of salt
• 2 ripe mangoes, sliced

Instructions:

1. Cook the rice: Drain the soaked glutinous rice and steam in a cheesecloth-lined steamer for 20-30 minutes, or until cooked through and sticky.
2. Make the coconut sauce: In a saucepan, combine the coconut milk, COCK Palm Sugar Cubes and a pinch of salt. Heat over low heat, stirring, until the sugar has dissolved. Do not boil.
3. Assemble: Once the rice is cooked, stir half of the coconut sauce into the sticky rice. Let sit for 10 minutes to allow the rice to absorb the flavours.
4. To serve: Spoon the sticky rice onto a serving platter, top with the sliced mango and drizzle with the remaining coconut sauce. Garnish with sesame seeds or mung beans, if desired.
