Preparation:

Redfish fillet with fresh skin can be excellently prepared in the oven or in a pan. Since the flesh of the flounder is thin and delicate, it is best to simply season it with salt and pepper and then fry it in butter.

• In the oven: Bake at 180°C for about 10-15 minutes, until the fish is cooked through and golden brown.
• In a pan: Fry over medium heat for 2-3 minutes on each side, until golden brown and crispy.
