Alnatura Organic Coconut Flakes
These juicy coconut flakes give aromatic and exotic touch to biscuits and pastries, soups and sauces, but also to muesli and fruit salads. The coconuts used for the Alnatura product are grown according to ecological guidelines.
Usage - Vegan Raspberry Coconut Pancakes
Preparation time
10 minutes + 1 hour 10 minutes soaking time + 35 minutes baking time
Ingredients
For 6 pieces
- 1 pack of Alnatura Organic Vegan Egg Substitute Powder
- 150 ml of carbonated mineral water
- 12 teaspoons of raspberry jam
- 6 teaspoons of Alnatura Organic Lemon Juice
- 6 teaspoons of water
- 350 ml of unsweetened coconut milk (room temperature)
- 75 g of Alnatura Organic Margarine (soft)
- 140 g of Alnatura Organic Wheat Flour (type 405)
- 2 teaspoons of Alnatura Organic Raw Cane Sugar
- 3 pinches of sea salt
- 6 teaspoons of cooking oil
- 6 teaspoons of Alnatura Organic Coconut Flakes
Preparation
- Mix the vegan egg substitute and the mineral water thoroughly, cover and let it swell for 10 minutes.
- Mix the raspberry jam with the lemon juice and water in a small bowl until smooth.
- Put the coconut milk, margarine, flour, sugar and salt in a bowl with the swollen egg substitute and mix with the whisk of the hand blender until smooth. Cover and let it swell at room temperature for 1 hour.
- Heat a non-stick pan over medium-high heat. Grease the bottom of the pan with 1 teaspoon of cooking oil using a silicone brush. Quickly pour 1/2 ladle of batter into the pan and spread evenly. Fry until the pancake starts to brown around the edges, separates from the bottom of the pan and bubbles form in the middle. Turn and continue frying for 1 minute. Fry the remaining pancakes in the same way.
- Spread 1 teaspoon of raspberry jam on each half of the pancake, sprinkle with coconut flakes, roll up and serve.
Tip
The pancakes are easier to fry in a low-rimmed, well-coated pan.
