Storage methods

• Freezing in water: Minced garlic can be frozen in ice cube trays covered with water. This way it can be stored for up to 12 months and is easy to portion out when cooking.
• Airtight containers: Unused cloves can be stored in a sealed plastic container in the refrigerator for 3 days.
• Confit in oil: Confiting garlic (cooking it until soft) in oil will keep it fresh for up to 1 week.
• Drying and freeze-drying: Freeze-dried or dried garlic will keep its flavor for a long time and is easy to use.

Culinary uses
Basic recipes and techniques

• Roasted garlic: Drizzle whole heads with olive oil, wrap in foil and roast at 200°C for 25–35 minutes. The softened cloves are great in spreads or as a side to meat.
• Garlic butter or oil: Mix pressed garlic with butter or oil, season with herbs and store in the refrigerator.
• Injected into meat: Mix minced garlic with salt, pepper and inject into meat before roasting.
