First, prepare the gnocchi dough. Cook the potatoes in their skins in lightly salted water, then peel them after they have cooled. Grate the potatoes finely and place them in a large bowl. Add the two types of flour, a pinch of salt, the egg, and knead into a smooth dough.
Divide the dough into smaller portions and roll them into thin cylinders. Cut them into pieces about one centimeter long, then form them into balls. You can also press a ribbed pattern onto their surface with a fork. Cook the gnocchi in boiling salted water; as soon as they float to the surface, drain them.
Next, prepare the sauce. Heat oil in a pan and sauté the finely chopped red onion and crushed garlic. Add the diced chicken breast, then season with salt and pepper.
