Ingredients
- 250 g pastry flour
- 125 g soft butter
- 1 egg
- 40 g granulated sugar
- 6 g baking powder
- 700 g apple (peeled, diced)
- 60 g corn starch
- 1 vanilla bean
- a little fine flour for rolling
- powdered sugar for sprinkling
Steps
- 1Preheat the oven to 180 °C. Grease a roughly 25 cm diameter Coulter mold or pie dish with butter and sprinkle with a little flour.
- 2For the dough, place the flour, soft butter, egg, sugar, and baking powder into a food processor bowl and knead on medium speed for about 3 minutes.
- 3For the filling, cut the apples into approximately 1 cm cubes. Cut the vanilla bean in half lengthwise and scrape out the seeds. Thoroughly mix the apples, vanilla seeds, sugar, and starch in a bowl.
- 4Divide the dough into two parts. On a floured surface, roll out both parts to the size of the mold. Place one sheet into the bottom of the mold.
- 5Spread the apple filling evenly over the dough, then cover with the other dough sheet.
- 6Place in the hot oven and bake for about 25 minutes, until golden brown. Let it cool completely in the mold. Before serving, generously sprinkle with powdered sugar.
