Ingredients

  • 250 g pastry flour
  • 125 g soft butter
  • 1 egg
  • 40 g granulated sugar
  • 6 g baking powder
  • 700 g apple (peeled, diced)
  • 60 g corn starch
  • 1 vanilla bean
  • a little fine flour for rolling
  • powdered sugar for sprinkling

    Preheat the oven to 180 °C. Grease a roughly 25 cm diameter Coulter mold or pie dish with butter and sprinkle with a little flour.

    For the dough, place the flour, soft butter, egg, sugar, and baking powder into a food processor bowl and knead on medium speed for about 3 minutes.

    For the filling, cut the apples into approximately 1 cm cubes. Cut the vanilla bean in half lengthwise and scrape out the seeds. Thoroughly mix the apples, vanilla seeds, sugar, and starch in a bowl.

    Divide the dough into two parts. On a floured surface, roll out both parts to the size of the mold. Place one sheet into the bottom of the mold.

    Spread the apple filling evenly over the dough, then cover with the other dough sheet.

    Place in the hot oven and bake for about 25 minutes, until golden brown. Let it cool completely in the mold. Before serving, generously sprinkle with powdered sugar.
