Recipe
Tzatziki.
Ingredients (4 servings)
- 2 medium cucumbers,
- 12 tbsp Greek yogurt,
- 1 teaspoon salt,
- 1 pinch white pepper,
- 1 lime juice from lime,
- 5 cloves garlic,
- 1 pinch dill (freshly cut)
Preparation
Grate the cucumbers into a bowl on a medium grater. Then make the dressing: mix the yogurt in a bowl with a whisk, then grate the garlic on a fine grater and mix it in. Season with ground pepper and salt, then sprinkle in the dill and bring out the full flavor with the lemon juice. Pour the dressing over the cucumber and mix with a spoon. Refrigerate before serving, excellent with meats, as a sauce.
Yogurt eggplant salad
Ingredients (2 servings)
- 2 eggplants,
- 4 dl Greek yogurt,
- 3 cloves garlic,
- 2 tbsp coriander (ground, to taste),
- salt to taste,
- pepper to taste,
- 1 tbsp olive oil
Preparation
Preheat the oven to 180°C. Dice the eggplants. Place the eggplant cubes on a baking sheet lined with lightly oiled baking paper in a baking tray, salt lightly, and drizzle with a few more drops of olive oil, then mix to coat the oil everywhere. Bake in the oven for 15 minutes. Meanwhile, mix the Greek yogurt with the spices - coriander, crushed garlic, a little salt and pepper. Mix the roasted eggplant with the yogurt after baking. Refrigerate before serving.
Storage
Refrigerated, at a temperature between +2°C and +8°C. Consume within 1-2 days after opening!
