Ingredients for 2 people

  • 500 g HúSszabóság pork tenderloin
  • 1 tablespoon of mixed pepper
  • 1 tablespoon of salt

Caramelized onion 

  • 2 tablespoons of olive oil
  • 2 large red onions
  • 50 g brown sugar

Plum sauce

  • 8 plums
  • 100 ml water
  • 1 teaspoon of ground cloves
  • 1 teaspoon of ground ginger
  • 50 ml whiskey
  • 2 tablespoons of wine vinegar
  • 100 ml cream
  • 1 pinch of salt

Preparation

  1. For the plum sauce, use pitted plums, which are finely chopped and steamed in a little water to soften them a little. Pour the whiskey over it, boil it away on a higher flame, then pour in the vinegar, add the spices and the cream. Pour into a knife grinder and mix to the desired consistency.
  2. For the caramelized red onion, slice the onion and start to heat it in a little oil, on a slower heat, for 8-10 minutes. Then add the sugar, mix thoroughly, then simmer for another 5-8 minutes.
  3. Roll the pork tenderloin in a mixture of salt and crushed mixed pepper and fry it in a hot pan in a little oil for 10-15 minutes, turning it over and over on a medium heat.
