Blue Dragon Rice Vinegar
Rice vinegar is an essential ingredient for making sushi, as it binds the rice grains together and gives the rice a special, delicate flavour.
It contains no artificial colours, preservatives or flavour enhancers. It can also be consumed by vegans and vegetarians.

Suggested use
To make sushi Su, season with sugar and salt. You can also use it to make salads, wok dishes and marinades.
Ingredients
30 dkg sushi rice, 4 dl water, 3 tbsp Blue Dragon Rice Vinegar, 1 tbsp cane sugar, 1 pinch of salt, 25 dkg raw salmon, 1 cucumber, 1 medium red bell pepper, 1 dkg green bell pepper, 1 yellow bell pepper, 1 avocado, 1 teaspoon of canned wasabi, 20 g kiwi caviar, 5 sheets of nori seaweed, Sushi ginger.
Preparation
- Rinse the rice at least 8-10 times until the washing water is completely clear. Then put it in a pot and pour in enough water to cover it (about 4-5 dl). Bring the whole thing to a boil, then remove from the heat and let it rest for 15 minutes, covered.
- Mix the rice vinegar, sugar and salt in a small bowl, then mix it into the cooked rice - this will make it sticky. Spoon the vinegared rice onto a larger, flat plate and wait until it has cooled completely.
- Slice the fresh salmon into half-centimetre-thin slices and chop the vegetables.
- Place the nori sheet on the bamboo roller and cover it evenly with a portion of rice.
- Place a row of fish fillets on the rice, then the vegetables and ginger. When you have put everything on, carefully but tightly start rolling up the sushi with the help of the bamboo sheet.
- Let the sticks rest for 10 minutes. Wet a sharp knife and slice the sushi with it. Serve dipped in soy sauce, but you can also accompany it with wasabi, caviar or pickled ginger.
