What is chutney?
A condiment of Indian origin, full of spices, which can be salty, spicy, sweet or sour. It is typically made from vegetables or fruits, to which salt, spices, sugar, onion, vinegar are added. It is not usually cooked, it is enough to crush the ingredients thoroughly, and it can be consumed cold or hot.

Perfect with pappadums Indian bread, sandwiches, cheeses, meats.
Also recommended with Naan bread.
Ingredients
1 dl lukewarm water, 0.5 teaspoon sugar, 1.5 teaspoon instant yeast, 13 dkg fine flour, 8 dkg graham flour, 1 teaspoon garlic powder, 1 teaspoon salt, 1 tablespoon olive oil, 125 ml milk, 2 teaspoons black sesame seeds, 4 tablespoons melted butter, 2 cloves garlic, 4 pinches of coarse salt, fresh coriander to taste.
Preparation
- Mix the sugar and yeast with the lukewarm water and let it rise.
- Pour the risen yeast into a large bowl. Add the flours, garlic powder, salt, olive oil and finally the milk.
- Knead well by hand. Once the dough has come together into a block, knead for at least another 1-2 minutes. When you feel it is ready, transfer it to an oiled bowl, cover with a tea towel and let it rise for an hour.
- Place the risen dough on a floured board and divide into four. Knead each portion a little, then roll out into an oval shape.
- Sprinkle a little black sesame seeds on a smaller cutting board, place one of the rolled out flatbreads on it, and roll it once with a rolling pin - this will press the sesame seeds into the dough.
- Heat up a frying pan and place one flatbread in it. Fry until the top of the dough starts to bubble (this is due to the yeast content). Then turn it over and fry the other side for half a minute to a minute.
- While baking, quickly mix the butter with the grated garlic.
- Brush the finished naan breads with the garlic butter immediately, then sprinkle with a pinch of salt and as much freshly chopped coriander as you like. Taste with Patak's mango chutney sauce!
Producer information
The brand was founded by Indian-born L.G. Pathak. When his father died, the family moved to Kenya in the hope of a better life, which they found: they opened a shop where they sold Indian sweets to other families who missed the tastes of home.
In 1956 the family moved to Great Britain. L.G. had difficulty finding work, so his wife, Shanta, came up with the idea of restarting their Kenyan business in London. The delicacies made in her tiny kitchen soon became famous, and soon there were queues at their front door.
A few years later they opened an Indian grocery store, but the real turning point came when the Pataks (they had dropped the "h" from their name by then) once ordered too many vegetables. L.G. decided to make pickles from the leftover vegetables. The vegetables preserved in oil with freshly ground spices were able to preserve the authentic flavours of India.
The brand was taken over by their son, Kiri. His wife, Meena, came up with the idea of making sauces that would allow those who don't have time to mix the ingredients themselves to make curry quickly and easily at home. And as they say, the rest is history.
Storage
Store in a dry, cool place. Once opened, store in the refrigerator and consume within 6 months, before the expiry date.
