How to make the perfect sponge cake? Everyone knows that sponge cake is a very delicate dough. It easily "breaks down" and collapses if not prepared properly.

Recipe suggestion

Cream the egg yolks with two-thirds of the sugar until creamy and white. This takes 3-4 minutes with an electric whisk on maximum speed. Beat the egg whites until stiff, adding the remaining sugar towards the end.

  • Put one-third of the whipped egg whites on the sugared egg yolks, but do not mix yet. Sift one-third of the flour mixed with baking powder on top, so that there are no lumps, then gently mix together. Mix in the remaining foam and flour in the same way, in two batches.
  • Grease a large baking tray, flour it or line it with baking paper. Spread the mixture evenly over it. Bake in a preheated oven, on medium heat (180 °C; 165°C in a fan oven) for about 20 minutes.
  • If you are not baking a sheet but a sponge cake disc, smooth the mixture into a greased, floured or baking paper-lined 24 cm diameter cake tin, then bake on medium heat for 30-35 minutes. It is done when it starts to visibly separate from the side of the tin at the edge, and no sticky mass sticks to the needle inserted into the middle.

Some tips for baking and cooking:

  • If the recipe says to cut the sponge cake disc into 3 parts, then add 1 egg, 1 tablespoon of sugar and the same amount of flour so that the dough is larger and easier to cut.
  • If you are baking a chocolate sponge cake, use 1 tablespoon of bitter cocoa powder instead of the same amount of fine flour, and pour 1 tablespoon of water into the egg yolks beaten with sugar.
  • In the case of a walnut sponge cake, replace 2 tablespoons of fine flour with the same amount of ground walnuts.
  • To make a sponge cake roll, lightly sprinkle the top of the baked sponge cake base with flour, turn it out onto a baking sheet, remove the baking paper while still warm (if there was any on it), and roll it up and wrap it up again (you can also use a tea towel). Do it while still warm, because if it cools down it will break and cannot be rolled.
