Sour cream is made using freshly pasteurized milk, cream and lactic acid bacteria cultures. It gets its pleasant flavour and aroma from the addition of special microbial cultures used for fermentation. They are popular in Hungarian cuisine; either with lower or higher – 12-20 %(m/m) – fat content.
