Italian blue cheese with blue-green veins, fine, melting texture and spicy taste.

Blue cheeses have been produced for centuries, in the first phase of cheesemaking, the curd made from the curdled milk is inoculated with a noble mold called Penicillium roqueforti or penicilium glaucum. During the ripening process, this noble mold permeates the cheese and colors it from light green to dark blue.
