Chayote squash
This interestingly shaped tropical vegetable belongs to the same "family" as pumpkin, pattypan squash or zucchini, and its taste and texture are similar to them. Chayote's most pleasant taste is closest to kohlrabi and cucumber, but it is relatively mild, so chayote is rarely consumed without modifications and seasoning. The size (10-20 cm), shape, colour and hardness of the fruits vary greatly. Healthy chayote is light green, firm, without brown spots and shoots. In this condition, it can be stored for a long time, especially in the cold. The whole plant is edible, and the soft seeds can also be eaten, which have a mild nutty flavour. In Asia, its root, leaves and shoots are also eaten.
Consumption
The fruit does not need to be cut, it is consumed whole, and only heat-treated for a short time so that it remains soft after cooking. Smaller fruits are more fragile and have a stronger flavour. Its flesh goes well with Mexican, Asian and Arabic cuisine. Fresh chayote is excellent in salads, salsas, marinated in lemon or lime juice, or simply combined with salt, pepper and butter (a popular preparation in Australia). It is heat-treated similarly to smaller squashes - it can be steamed, baked, roasted, marinated, stuffed, added to meat and spice mixtures.
